Aunty Pamela’s 80th Birthday Cake

My great aunty Pamela celebrated her 80th birthday on Sunday, and asked if I’d make her cake for her. She wanted an autumnal theme, as she loves the falling leaves, and since her birthday falls right in the midst of Autumn what could be more appropriate? πŸ™‚ The cake is orange cake with orange buttercream, and the piping is done in orange buttercream as well. The leaves are made from fondant. It’s a bit hard to tell in the photo, but the icing covering the cake is tinted ‘ivory’.

    My favorite leaf decoration: wash some real leaves, paint one side with chocolate, *freeeeze*, remove original leaf πŸ™‚

    My fiance and I are trying to recreate a grapefruit buttercream we have sampled and want to know what is the best way to get the intense grapfruit flavor. As we have tried recreate the flavor we have had to use to much grapefruit juice where it thins out the buttercream to much. We are using freshly squeezed grapefruit. We have looked for a grapefuit oil similar to lemon or lime concentrated oil. One is there such thing and two do you have any tips on creating a grapefruit flavored buttercream. We were at an event that had a cake with pink grapefruit buttercream it was amazing. We would love to figure the grapefuit flavor. So if you could help that would be great!

  4. Hi Joshua,
    I’ve never made a grapefruit buttercream; the orange one just uses orange juice, but a concentrate should do the same job. Try your local health food store, or search online for grapefruit concentrate – I’m not sure what part of the world you’re in so can’t advise you where to shop, but Google is a good friend of mine! πŸ˜‰ I know such a thing does exist.
